[Recipe] Raspberry Pie
I wanted to make berry pie but because fresh ones are insanely expensive around here, I had to make do with frozen berries. I came across frozen raspberries for about Rp. 59,000/pack ($5) of about half a kilo. Not the cheapest, but definitely not the most expensive. (blueberries are).
For the filling, I used the fresh berry pie recipe I took from Betty Crocker Picture Cookbook (1st edition!), just slightly modified due to the use of frozen berries. For the crust, I took Grandma O'Reilly's tried and tested crust recipe below.
Grandma O'Reilly's Pie Crust
4 cups all-purpose flour (512 grams)
1 1/2 cups crisco/lard + 1/2 cup butter
*(or a total of 2 cups of butter if you want better flavour, though it would result harder dough to work with)
1 egg yolk
1 tbsp white vinegar
1/2 cup + 3 tbsp iced water
1. Measure all dry & wet ingredients, keep them chilled until last minute
2. Combine all dry ingredients, cut butter in. ( I blitz the mixture in a food processor for a few seconds until it resembles coarse sand)
3. Drizzle in the wet ingredients, blitz until slightly combined and medium sized chunks formed
4. Dump it onto a dry surface and gather all the mixture into a ball, knead it just about one or two push. (do not over knead!)
5. Divide and form it into a ball, chill it for at least 30 minutes before rolling.

Frozen Berry Pie
modified from Betty Crocker's Fresh Berry Pie
Ingredients:
1/2-3/4cups of sugar (use less or more depends on the tartness/sweetness of the fruit you use)
3 tbsp flour
1,5 tbsp cornstarch (omit if using fresh berries)
2 cups of berries
1 tbsp butter, cut in small pieces
1. Preheat oven to 425F or 220C
2. Mix all ingredients, add more flour if you can still see some liquid from the berries.

3. Dump it all into the prepared pie crust that has been sprinkled with sugar+flour mixture. (we don't want soggy bottom crust, yo)

5. Cover with top crust, lattice if you feel like doing fancy, or leave it bare if you don't have enough crust hanging around!
6. Brush with mixture of egg yolk and a little bit of milk
7. sprinkle with sugar
8. Bake for 30-40 minutes (start checking at 25!)
9. At first, if you use raspberries like me, you will notice the filling will look very-very runny, this is fine. After getting it out of the oven, let it cool, and you will notice the filling will be firmer.
10. Dig in, preferably with vanilla ice cream!
